Rosemary Potatoes
I firmly believe that if you eat in moderation, you can eat anything you want. While I tend to keep it light during the week so that I can mindlessly eat pizza on the weekend, I do occasionally throw in a heavier side dish, such as potatoes.
Don't craze diet, don't starve yourself, don't eat the whole bag of potatoes in one sitting. Eat healthy portions of clean foods and be happy
Ingredients:
small bag of your favorite potato (these are small red potatoes)
1 sprig of fresh rosemary
1/2 clove sliced garlic
salt/pepper
1/2 cup extra virgin olive oil
Directions:
Cut your potatoes into quarters or slices
In a large mixing bowl, toss your potatoes, olive oil, salt/pepper, & rosemary. Mix well
Lightly coat your frying pan with olive oil and toss your mix in over medium heat
Stir occasionally allowing your potatoes to brown on each side
When the potatoes are crisp on the outside but cooked through, toss your garlic in and allow to slightly brown, if needed add an extra drizzle of olive oil
(As an alternative, you can also heat oven to 350 degrees & slow roast your potatoes, stirring occasionally.)
