Buffalo Cauliflower Bites
Ingredients:
1 whole cauliflower chopped
1 cup of all-purpose flour or almond flour
1 egg
blue cheese crumble
blue cheese dressing
celery stalk
salt/pepper
vegetable oil
Buffalo Sauce:
1 cup franks red hot sauce
1 teaspoon garlic powder
2 tablespoons butter
1 tablespoon white vinegar
Once the cauliflower is separated into florets, drop into a pot of rapidly boiling water. Let them cook for 5 minutes. Drain the cauliflower in a colander and rinse with cool water to stop the cooking process.
Preheat a skillet with vegetable oil (avocado oil is a great alternative)
In a small bowl prepare mixed egg and a separate small bowl of flour with a pinch of salt and pepper
Evenly coat each floret into egg first and then lightly toss into flour mixture. Shake excess flour off
Gently place coated florets into heated oil and allow to cook on each side until slightly brown (approximately 5-7 minutes on each side)
Toss fried cauliflower in a bowl with fresh buffalo sauce
Place Cauliflower on a skewer with slice of fresh celery and serve over a spoonful of blue cheese dressing. Garnish with blue cheese crumble and chive
