Cauliflower & "Chorizo" Souffle
As a self proclaimed "terrible baker", I am not ashamed to say that this dish will be the tastiest creation to ever come out of my oven. If you find omelets to be too much trouble or difficult, this is a great substitute. The cauliflower is key, as I don't use any flour or dairy fillers other than cheese (which is optional), any other ingredients you want to add are completely to taste.
Ingredients:
6 large eggs
2 cups of raw cauliflower chopped
1/2 cup Trader Jos vegan chorizo
1/2 cup American cheese
salt/pepper
hot sauce (optional)
sour cream (optional)
Directions:
Preheat oven to 375 degrees
In a mixing bowl, add the eggs, cauliflower, cheese, salt and pepper. Mix well
In 4 nonstick mini pie tins or soufflé baking dishes, pour the egg mixture leaving a little bit of room for rising
Evenly crumble a spoonful of the vegan chorizo over each dish
Bake for 15-20 minutes until the eggs rise and are fully cooked. Drizzle with hot sauce and serve
