Spicy Cashew Wrap
These delicious collard green wraps can be a quick snack or a fun healthy lunch option. They are so easy to make and can be mixed up with any ingredients you love- add bell peppers, quinoa, or even more lettuce. I prefer to cut the hard stems off of the collard greens, which will make rolling them a little bit messier, but it is completely up to you. The spice comes from the Sriracha and fresh garlic but I love adding even more fire with fresh jalapenos.
Ingredients:
(Cashew Filling)
4 small basil leaves
1 fresh garlic clove
1 tablespoon vegetable stock
1-2 cups raw cashew nuts
1/4 cup fresh carrot
1 teaspoon extra virgin olive oil (if needed)
salt
2-4 large collard green leaves
1 cup of sprouts
1 roma tomato sliced
1/2 cucumber sliced
1 avocado sliced
1 tablespoon sriracha hot sauce
Directions:
In a small food processor add basil, garlic and carrots. Process until at a fine consistency. Add the remaining ingredients and pulsate until all of the cashews are a course, paste like texture
Lay the collard green leaves on a cutting board and gently cut off the bulk of the stem. Be sure to not cut too high so that you have a solid piece of collard green to wrap with
Place the collard green stem side away from you and lay your ingredients at the bottom of the leaf, making one pile
Very carefully fold the sides slightly in and begin rolling the leaf forward. This may get messy, just hold it firmly while wrapping pulling the ingredients towards you creating a stuffed burrito like wrap
