Brussel Sprout Coleslaw

Brussel Sprout Coleslaw

Ingredients:

1/2 pound or 1 bag fresh brussel sprouts
2 large carrots
1/4 diced red onion
1/4 diced serrano (optional)
2 tablespoons Veganaise
1/2 tablespoon white vinegar
1 tablespoon whole grain mustard
1 teaspoon garlic powder
2 teaspoon onion powder
salt/pepper to taste (approx. 1 teaspoon)

Directions:

In a food processor, pulse brussel sprouts until they are down to a shredded consistency. *Careful not to over process

Place brussel sprouts into a large mixing bowl

Add carrots to food processor, creating the same consistency as brussel sprouts

Add all ingredients to bowl and mix well, adding salt and pepper to taste

Cover and refrigerate for at least 30 minutes for best results
