Shaved Brussel + Artichoke Salad

Shaved Brussel + Artichoke Salad

Ingredients: 

 1 pound fresh brussel sprouts (frozen will not work)
1/2 red onion finely chopped
1 roma tomato finely chopped
1/2 cup shaved asiago or parmesan blend cheese
1-2 cups chopped artichoke (use drained marinated artichoke if you don't have fresh cooked)
1/4 cup extra virgin olive oil
1/8 cup lemon juice
salt/pepper (to taste) 

 

Directions:

In a large mixing bowl use a medium to fine grater carefully shaving each brussel sprout individually. If you have left over leaves that can't be shaved down, use a knife to roughly chop the remainder

Mix in the onion, cheese blend, tomato, artichoke

In a small bowl, combine olive oil, lemon, salt and pepper. Mix well and then gently stir into the brussel sprouts.

Cover and let sit refrigerated for at least 1 hour for best results, allowing the lemon and oil to marinate into the leaves

Add salt and pepper as needed
