Garlic + Asiago Artichokes
Ingredients:
2-4 fresh whole artichokes
1 lemon freshly squeezed (or 2-3 tablespoons)
3 tablespoons extra virgin olive oil or avocado oil
1/4 cup shaved asiago blend cheese
salt/pepper
1 pinch of cayenne pepper
1 table spoon chopped serrano (optional)
1/8 cup chopped red onion
2 cloves fresh garlic crushed
Directions:
Preheat oven to 375 degrees
Cut the stems off of your artichokes leaving a flat base.
Place the artichokes into a large pot of boiling water for 5-7 minutes and then allow to cool down and dry off
In a small pie pan or ramekin, set 1 artichoke in each dish. Gently open each layer of leaves stuffing with shaved cheese
In a separate bowl, combine crushed garlic, lemon, olive oil, onion, cayenne, salt and pepper. Mix well
Gently spoon a tablespoon or generous coat of dressing into each artichoke
Bake for 20-25 minutes or until cheese is bubbling and edges brown
Remove the artichoke to a serving plate and pour the remaining oil mixture into a serving bowl to use as a dip
