Tomato & Basil Bruschetta

Whether you are hosting friends to watch football or having a formal holiday party, this quick appetizer will disappear faster than it took you to make it. You can use any type of tomato that you have on hand but if possible, using one with less water content such as the roma is best.

Have leftovers? Add feta to your bruschetta mix for an overstuffed omelette.

 

Ingredients:

16 ounces roma or cherry tomatoes
1/4 cup finely chopped red onion
1/4 cup finely chopped basil
1/2 teaspoon finely chopped or crushed garlic
1 tablespoon balsamic vinegar
1 tablespoon extra virgin olive oil
1/2 teaspoon salt & pepper to taste
1 large fresh baguette

 

Directions:

Finely chop the tomatoes, onion, basil and garlic

In a medium size bowl, mix all of your ingredients while adding the balsamic, olive oil, salt and pepper

Refrigerate for at least one hour to allow flavors to marinate

Cut your baguette into quarter inch thick slices and then lightly toast

Add a spoonful of bruschetta mix to each baguette slice shortly before serving your guests to avoid soggy bread. Garnish with extra basil or fresh parmesan
