Spicy Thai Salad
This dish is inspired by my absolute favorite Thai Salad 'Plar Goong'. I did not have shrimp in the fridge for this particular rendition, but note you can always add your choice of protein. In the interest of full disclosure, I also cheated with bottled Thai Seasoning. What can I say....it was all I had. Without further ado, here is the breakdown.
(Note: Everything listed in my recipes are approximate to guide you. Build your dish to your preferred taste)
Ingredients:
1 head of organic romaine lettuce
2 chopped roma tomatoes (you can use any preferred tomato)
1/2 thinly sliced red onion
3-4 thinly sliced scallions or shallot
1/2 or whole sliced cucumber
1/2 bunch of sliced celery
1-2 chopped thai chili pepper & serrano
1/2 cup chopped cilantro
1/2 cup chopped mint
1/4 cup thinly sliced lemongrass
Dressing
1 Tablespoon of Salt Free Thai Seasoning (sesame seeds, chile pepper, coriander, onion, red pepper, shrimp extract, garlic, cinnamon, nutmeg, lemon oil)
1/2 cup of lime juice
1 tablespoon of fish sauce
1 tablespoon of chili paste (optional)
Mix lime juice, fish sauce, and seasonings together then toss heavily into the salad mixture
Lay romaine leaves down onto plate and serve salad on top with additional mint and cilantro as garnish
(For best results let the dressed salad mixture sit in fridge to marinate for a few hours. I have also improvised this recipe with olive oil and rice vinegar when I did not have lime and fish oil, you will still enjoy.)
