Kale & Tuna Salad
If you have never spent time gardening, let this be the year you begin. You do not need 10 acres or a tractor to harvest beautiful, fresh vegetables and herbs. Gardening is a terrific alternative to the expensive Farm to Table restaurants, providing vibrant flavors of fresh vegetables on a daily basis. Live in an apartment? Put a planter in the window with fresh herbs. You can even get some tomatoes and cucumbers in the warmer months. Don't have a window? Time to rethink where you live. You need some sunshine.
This Kale Salad is filled with fresh herbs and whatever pickings were available for the day. I tend to make my tuna salad with out mayonnaise for a healthier option (sub the mayo with olive oil and lemon) however, this particular salad I indulged.
Ingredients:
chopped red leaf kale
red onion
cherry tomatoes
flat leaf parsley
fresh mint
fresh jalapenos (optional)
(try adding chopped bell pepper & cucumbers)
For The Tuna:
3 cans of albacore tuna drained
1/4 cup of vegan-aise or mayo
1 tablespoon of dijon mustard
1 teaspoon fresh chopped dill
1/4 cup chopped red onion
1/4 cup chopped celery
salt/pepper
Salad Dressing:
1/2 cup of extra virgin olive oil
1/4 cup fresh lemon juice
1/2 teaspoon crushed garlic
salt/pepper to taste
