Portofino Tuna + Herbed Kale Salad

Tuna in a can has never been so fancy! Don’t let fancy fool you, this recipe was thrown together in a flash and can be modified to your taste just as easily. Portofino’s wild caught fish are hand-selected fillets of Albacore or Yellowfin tuna marinated in extra virgin olive oil with sea salt. My favorite is the 2.5oz to-go pouch that I can throw in my bag with crackers for the beach. I usually smother my canned tuna in veganaise and salt, but the olive oil and sea salt flavor in these pouches blew me away. The salad barely needed additional dressing after mixing the tuna in, which saved me from the additional unnecessary calories. If you are an ingredient hound like myself you, will be happy to note these cans are packed with only three ingredients: tuna, extra virgin olive oil and sea salt. No unpronounceable items to be consumed and no messy draining of water here. I decided to pre mix my tuna with herbs, capers, salt and pepper and then tossed it into my salad mixture when I was ready to eat. Do not forget the fried capers!! Catching a bite of that savory, salty crunch with the tuna is what makes this salad.

Ingredients:

1 can of Portofino Albacore Tuna
1 bunch finely chopped kale (I used curly leaf)
1-2 diced roma tomato
1/2 diced red onion
1 sliced fresh banana pepper
1-2 tablespoons of lightly fried capers
1-2 cups of cooked and cooled quinoa
1/4 cup chopped fresh mint
1/4 cup chopped fresh flat leaf parsley
2 tablespoons of lemon juice
1-2 tablespoons of extra virgin olive oil
1 teaspoon garlic powder
salt/pepper to taste
crushed red pepper flakes (optional)
