Pecan Crusted Salmon

Pecan Crusted Salmon

Ingredients:

1-2 Salmon Filets
2 tablespoons Amoretti extra virgin olive oil
1 half fresh lemon

(Crust Mix)
2 tablespoons Amoretti Pecan Flour
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
2-3 fresh mint leaves chopped finely
2-3 fresh basil leaves chopped finely
1 pinch fresh lemon thyme chopped finely
1 pinch fresh curly leaf parsley chopped finely
1 tablespoon fresh grated parmesan
1 teaspoon salt (to taste)
1 pinch ground black pepper

Directions:

In a small mixing bowl combine all crust mix ingredients, stir until completely blended

Pour crust mix onto a plate spreading evenly

Rub fresh salmon with extra virgin olive oil and then roll top (and sides if desired) onto crust mix leaving a thick coat

To help keep crust mix on gently press onto salmon, adding extra if necessary

In a medium non stick pan add a tablespoon of extra virgin olive oil and then gently lay salmon with the crust side facing down into pan

Allow to cook for 5-10 minutes until brown on each side, gently turning when ready

Drizzle a teaspoon of extra virgin olive oil and squeeze lemon juice over prepared salmon
