Broccoli Falafel
I have never successfully accomplished my homemade falafel recipes due to the after taste of flour I find. I set out to find an alternative and Amoretti did not let me down! I plan to try this recipe with the Pecan Flour next to see if it enhances the texture however, this version was enjoyed just as it is. While you could use lemon juice, the Natural Lemon Zest I used gave the flavor of my mix a perfect balance of zest. The Sriracha powder was a bonus enhancement giving me the ability to add some kick with out making my mixture soggy. Ingredients:
1 can of rinsed whole chickpeas
1/2 cup fresh broccoli
1/2 or 1 cup fresh parsley
1/4 cup diced white onion
3 garlic cloves
1 pinch of cumin
1/4 teaspoon Amoretti Natural Lemon Zest
1/4 teaspoon Amoretti Natural Sriracha Powder
3 Tablespoons Amoretti Premium Blanched Almond Flower
1 tablespoon salt (to taste)
2 cups of canola or avocado olive oil (if frying falafel)
2 tablespoons of Amoretti Finishing Extra Virgin Olive Oil
Directions:
Rinse can of chickpeas well and then allow to dry completely
In a large food processor combine dry chickpeas, parsley, broccoli, garlic, cumin, lemon zest, natural sriracha, broccoli, almond flower, salt, and onion
Pulsate blender until falafel mix is fully combined and broken down to a soft and fluffy consistency (you don’t want to over blend, causing it to become pasty
If mixture is too moist add more almond flour for a more dry texture
Roll mix into small balls or create a burger like patty and submerge fully into your heated oil for 4-5 minutes or until golden brown
Gently remove from oil and allow to cool
Lightly drizzle falafel with finishing olive oil and additional chopped parsley. Serve with tzatziki or lebni (See Recipe)
