Pesto Cauliflower 'Pasta'
Ingredients:
1 head of cauliflower chopped into smaller florets
1- large bunch of broccoli rabe cut into quarter pieces
half clove of garlic sliced
3/4 cup of extra Virgin Olive oil
3/4 cup of pesto
1 cup of sun-dried tomatoes chopped (optional)
1/2 cup pine nuts
salt/pepper to taste
1/2 teaspoon onion powder
hint of crushed red pepper (optional)
In a large skillet, generously coat the cauliflower with olive oil and let sit on medium heat for 10-15min or until brown (mix occasionally to avoid burning)
Once the cauliflower is slightly brown add the broccoli rabe. Let sit while occasionally mixing. (If you prefer your broccoli tender leave a lid on for a few minutes.)
When the broccoli is cooked through, add all garlic into same skillet (you can coat with more evoo) until slightly brown as well. Be careful, garlic burns very quickly. Sprinkle crushed red pepper for spice
In large bowl combine cauliflower, pesto, garlic, broccoli, salt, pepper, onion powder, sun-dried tomatoes, and pine nuts
Works well with onions or topped with shaved parmigiano as well
