Kale & Quinoa Soup
Ingredients:
1 cup tricolor quinoa
1 small white onion chopped
1 small red onion chopped
1 cup carrots chopped
1/2 cup red bell pepper chopped
1/2 diced jalapeno (optional)
3 celery stalks sliced
1 can diced tomatoes
1 can organic great northern beans (cannellini)
1 quart vegetable stock
2 cups chopped kale
3 garlic cloves diced
2 tablespoons lemon juice
1 teaspoon garlic powder
1/2 teaspoon crushed red pepper (optional)
salt/pepper to taste
2 tablespoons extra virgin olive oil
Directions:
In a large pot saute' the white onion, red onion and garlic in olive oil until slightly brown
Add all of your ingredients, leaving out the chopped kale. Mix well on medium/low heat then cover
Allow to simmer for at least 1 hour or until your vegetables are tender stirring occasionally
When the quinoa and vegetables are cooked through, stir in kale and serve immediately
