Simple Lentils

The weather has started to cool down as Fall makes her presence known. The best time of the year in the Northeast is filled with all sorts of fantastic activities. Relaxing by the fire, celebrating Oktoberfest, Apple/Pumpkin picking, leaf peeping (yes it does exist!) are just a few ways to enjoy the change of season. This particular evening, inspired by the chill outside and lack of groceries inside, I tossed some lentils in a pot with my scarce remaining vegetables and sat down with a glass of wine. A win-win situation for everyone involved.  

 

Ingredients:

2-3 cups of lentils (serves two people) 
1 chopped green bell pepper
1 chopped roma tomato
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon of cumin
pinch of cayenne powder
salt/pepper
6 cups of vegetable stock (works with water as well)

Throw all of your ingredients into a medium size pot and let simmer over medium heat.

Keep covered, stirring occasionally until your lentils are tender. You can always add more stock or water for more of a soup consistency.

Add chopped carrots, onions, celery and spinach for a delicious alternative .
