Avocado Baked Eggs

Avocado Baked Eggs

It doesn't get more simple than this. Two of the best ingredients thrown in an oven for a healthy, fresh start to the morning.

 

Ingredients:

avocado
eggs
salt/pepper
crumbled feta
crushed red pepper
flat leaf parsley (optional)

Preheat oven to 350 degrees

Cut the avocados into halves. Using a spoon, scoop out just a little of the center

To avoid a mess, crack your eggs into a bowl and then gently spoon them into the center of the avocado (Tip: if your avocado halves lean forward, slice a small piece from the bottom, creating a flat surface before you scoop eggs in)

Bake for 20 minutes or until the egg whites are completely cooked through

Sprinkle with salt, pepper, crushed red pepper flakes and feta. Add a smoky hot sauce for spice
