Simple Fall Soup

After you make this tasty soup you will be tempted to pretend you have slaved over the stove for hours upon hours to create such a perfect hearty concoction. You'll be worthy of a standing ovation... until your husband or wife reads this post and realizes you needed rest and a glass of wine from only 10 minutes of prep work. Ingredients

6 cups of vegetable stock
1 can fire roasted tomatoes
2-3 sliced mushrooms
3-4 stalks sliced celery
1 medium red onion chopped
1 cup dry mini lentils (any size is fine) 
1 can of drained and rinsed cannellini beans
1/2 chopped jalapeno (optional)
1 teaspoon cumin
1 teaspoon salt
1 teaspoon garlic powder
 

Directions

In a large pot mix all of your ingredients and allow to cook on low heat until your lentils are cooked through and your vegetables are tender
