White Bean + Artichoke Hummus

White Bean + Artichoke Hummus

Ingredients:

2 cans of organic northern white beans
1/2 tablespoon minced garlic
1 teaspoon salt (to taste)
2 tablespoons lemon juice
1/4 cup marinated or jarred artichokes drained
1 tablespoon fresh flat leaf parsley
1 whole green onion
1 tablespoon extra virgin olive oil

Directions:

Rinse canned beans thoroughly, draining all liquid

In a large food processor, add all ingredients except the olive oil. Process until at a smooth pureed texture, adding salt and lemon juice as needed

Chop additional onion, fresh parsley to garnish along with a drizzle of olive oil and crushed red pepper (optional)

Serve with veggies or warm pita
