Beet & Walnut Salad

It's safe to say there are at least 5 salads being made in my home, weekly. The challenge is never in making a salad, it is keeping it exciting so that I never get tired of them. This one makes an appearance regularly because it has so few ingredients while still packing a punch. If you don't want the creamier consistency- add the goat cheese right before serving instead of mixing it in.

 

Ingredients:

1 bag of fresh arugula
2 cooked beets sliced
1/2 cup cucumbers sliced
1/4 cup sliced red onion
1/4 cup raw walnuts
1/4 cup goat cheese

(Salad Dressing)
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon garlic powder
salt/pepper

 

Directions:

In a large bowl, add all of your salad and toppings

In a separate mixing bowl, whisk the dressing together and pour on top of the salad

Gently mix dressing into the salad until evenly coated, serve immediately
