Spicy Shrimp Scampi
I was hoping to make this dish mixed into a zucchini noodle linguini, however, I was lacking the key ingredient.. zucchini. So instead, I made a pot of garlic cous cous which was very complimentary to this sauce. Try swapping the serrano for a cherry pepper if you'd like a tasty mild version.
Ingredients:
1/2 shallot chopped
1/2 serrano chili pepper sliced
5 cloves of fresh garlic sliced
1 teaspoon fresh tarragon chopped
1/2 cup dry white wine
1 tablespoon fresh lemon juice
2 tablespoons of extra virgin olive oil
2 tablespoons of butter chopped
1/2-1 pound of raw shrimp
1 pinch crushed red pepper
salt/pepper to taste
1 teaspoon fresh parsley chopped
Directions:
In a separate bowl, generously season the raw shrimp with salt and pepper
In a large skillet heat 2 tablespoons of extra virgin olive oil over medium heat. Toss in garlic, shallots and crushed red pepper and serrano (optional)
Slowly add butter, white wine and tarragon stirring continuously for 1-2 minutes, then add the raw shrimp
Allow shrimp to cook on each side for 2-3 minutes or until fully cooked through
Toss in the parsley and lemon juice allowing to simmer for 1 minute and serve immediately
