Guilt-Free Caesar Dressing

While I don't love the idea of anchovies, I am a huge fan of an authentic creamy Caesar Salad. That being said, I am not a fan of feeling guilty after I have eaten any salad, so.. I put together a creamy yogurt version that I have found to be outstanding. You can definitely play around with it, add more lemon, more parmesan etc. I love adding avocado, red onion and tomatoes to my Caesars, it makes me feel good about my choices in life, or at least the meal of that moment.

 

Ingredients:

2 tablespoons of lemon juice
1- 7oz Fage (I used 2%)
2 sprigs fresh thyme (remove stem)
1 tablespoon Dijon mustard
1/2 tablespoon capers
1 tablespoon grated parmesan
1/2 teaspoon salt
pinch of black pepper
1 clove fresh garlic
1/2 teaspoon extra virgin olive oil

 

Directions:

In a blender add all of the ingredients and blend until a creamy consistency, making sure the capers and thyme are broken down. I drizzled the olive oil on top of the salad instead of blending it in, you can do either

Sprinkle extra parmesan on top of finished salad
