Green Goddess Dressing

Green Goddess Dressing

While this dressing was originally intended to be a yogurt base, I realized after prepping I didn't have an ounce of yogurt in the house. I swapped for sour cream and loved the result so I will recommend either. The options are unlimited as to what you can use this version of green goddess for, I have mixed it into a simple arugula salad, charred asparagus, used as a dip on a crudite' platter. It is so simple and light that it works well with almost anything.

 

Ingredients

16oz sour cream
1 tablespoon lemon juice
6-7 chives
1/4 cup cilantro
1/2 tablespoon crushed garlic
1 tablespoon extra virgin olive oil
1 small mild jalapeno (optional) 
1 teaspoon salt to taste 

 

Directions

Mix all of your ingredients in a blender until it comes to a fine liquid consistency. Stir to be sure there are no large pieces of chive or jalapeno

Salt to taste
