Kale & Orzo Salad

Ingredients

1 cup cooked orzo pasta
1 bunch chopped kale
1 cup chopped cucumber or cucamelons
1 cup heirloom tomatoes cut in halves
1/2 chopped red onion
1/4 cup crumbled feta
1/4 cup copped walnuts
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
salt/pepper to taste

Directions

Mix all vegetables, feta & walnuts together in a small mixing bowl, toss in the lemon, olive oil, salt & pepper

Sprinkle with additional feta & walnut for garnish
